Daing na Dagupan Bangus

Mojo Potatoes



Ingredients:
4 medium sized potatoes, unpeeled, scrubbed and rinsed
1 pack Crispy Fry breading mix
1 tsp garlic powder
1/2 tsp cayenne pepper
1 tsp paprika
2 tsp dried thyme
2 eggs
salt
a pinch of ground black pepper
cooking oil

Dip:
1/8 cup mayonnaise
1/8 cup all purpose cream
1/2 tsp garlic powder
1/2 tsp mustard
dash of dried parsley/ basil leaves
PROCEDURE:
  1. Slice your potatoes into thin coins.
  2. In a large bowl, combine and mix the breader and all the dried spices.
  3. In another bowl, crack and whisk the 2 eggs.
  4. Prepare the pan for frying by adding oil and bringing it to a high temperature.
  5. Dip each potato coin into the egg batter and then dredge it into the breading mixture.
  6. Deep fry each potato rounds for 2 minutes until golden brown in color.  Once cooked place in a paper towel lined plate then serve with the dip.
