This is a typical Ilocano or Pangasinense dish which consists of Bagoong Monamon or Fermented Fish Sauce as its soup base.
Ingredients:
- 1 kg. pork (any parts of pork will do)
- 1 medium sized shallot/ onion
- 1 medium sized crushed ginger
- 2 cups cut into 2 inches string beans
- 2 cups talbos ng sitaw/ string beans leaves or tops
- 1 cup monggo beans
- 1/2 cup bagoong monamon
Procedure:
- Boil the pork in a large pot with a liter of water together with the crushed ginger, onion and the monggo beans until tender. I prefer boiling them for at least 1 hour for the meat to be really tender.
- Strain the bagoong in a bowl. Bagoong comes with residues like the little fishes. We only need the sauce. Combine it with at least a half cup of water before straining so you can extract all the juices.
- Pour the strained bagoong in the boiling pork. Add some salt according to your preference. Let it simmer for at least 5 minutes.
- Put the string beans. Let it simmer of at least a minute then add the string beans leaves.
- Let it simmer until the leaves are done but not over cooked.
- Then your done! Simple A? =)
